Easy Banana Egg Pancakes!

Sometimes you are just in a hurry in the morning, or you just need a quick, filling breakfast. This easy recipe for pancakes is just that.


Food that you will need:
A banana
Two eggs
Butter OR if you are dairy-free, you can use any other cooking oil (coconut, olive, etc.)
(optional) Vanilla Extract
(optional) Assorted fall spices


Supplies you will need:
A bowl
A pan
A fork or potato masher
A spoon


To make this simple recipe, you will start off by tossing your banana and eggs in a bowl. Making sure to crack the eggs first, of course. Next, mash them together.
I like to add fall spices to mine, such as cinnamon and nutmeg.


And then of course, there’s my personal favorite, Trader Joe’s pumpkin pie spice. If you ever go to TJ’s, you have to get this!


Toss the butter or oil into your pan and let it melt.
Then, once it has heated, make small pancakes with the batter. Or you can pour the whole thing in the pan if you are in a hurry. Then when it comes time to flip it, you can just cut it into four pieces and flip them. I wasn’t in such a huge hurry this morning, so I made smaller pancakes.
They should take about a minute on each side, depending on how hot your stove is. They should look like this on each side when they are done:


Top with maple syrup!
